Stack ’em Up: Elevate Your Celebration with Tiered Cakes

I’m over the moon with excitement for today’s featured wedding question. “What is the difference between tiers and layers?” To put it simply a cake is made of layers. Tiers are the individual cakes stacked!

I relish ANY opportunity to make a tiered cake. I have even made them for myself for my birthday JUST BECAUSE I CAN! šŸ˜¹

Stay tuned on my IG. Eventually, I will find and show some photos of my first ever tiered cakes. Let’s just say, I’ve come a long, LONG way.

The MOST important aspect of stacking a tiered cake is the structure in the cake. Without a structure, the decadent and often heavy cake will sink and tilt and RUIN the visual experience of your cake. Looking at the bright side, the cake will still taste great!

Julia’s Baking Journey Detour

This was the foundation of my baking story. All I wanted was a cake that tasted GOOD. In my experience, prior to starting my cake decorating journey, all those fussy cakes with buttercream flowers, carved shapes, or fondant coverings were not filled with delicious cake. I felt like they were a waste of calories. šŸ™€ I would have rather eaten boxed cakes. (Another controversial opinion. I like the taste of MANY box cakes). I still feel this way about a lot of cakes (I’m looking at you, generic grocery store cake).

Back to the Structure of Tiered Cakes

Structure is usually made out of wooden dowels, smoothie straws or even metal rods and cake boards (made of cardboard, acrylic, plastic, or metal). I use smoothie straws and cardboard most often. The smoothie straws are cost effective, but I’m actively seeking other alternatives before I resupply. The straws (rods or dowels) create a base for the cake boards to rest without squishing the cake below.

I always use at least 3 straws in each tier. Think of it like a table. A table with two legs cannot stand on its own. If you tilt or bump it may shift or fall. I often use 4 for the size cakes I bake. (The largest base I make is 12″). I can bake up to 14″ cakes, but I haven’t had any requests thus far.

Final Thoughts

The fun of tiered cakes is they have limitless options. You can mix and match the number of layers and shapes. I am waiting on pins and needles to make a cake with varied cake layers. Hoping I’ll find an excuse to do one this year! (I’d do it for my birthday this year, but I am going to work on perfecting Macaron making!!!!)

Ocelot Bombs!

I have a new love affair- with Hot Cocoa Bombs. I love deep, rich, and decadent chocolate. Chocolate Chip Cookies are a standby in my house (or variations on them), and Brownies are a close second. They are my comfort treats.

This winter season has been unseasonably warm. I went skiing in the rain over the weekend (that’s right skiing, not singing). To warm back up, I knew the best trick was to drink a steamy cup of hot cocoa.

Why is it called a Bomb?!

This is more akin to bath bombs, not a cherry bomb. When steaming hot milk is poured over the Ocelot Bomb (aka Hot Cocoa Bomb) the chocolate melts and the homemade marshmallows pop out from the inside or depending on how the milk has pored, sometimes it’s like they are blooming.

Itā€™s All About the Chocolate

Currently, I’m using a blend of dark and semi-sweet Ghiradelli chocolate. I wanted quality chocolate that would have some rich flavor to it, but that was also easily accessible for me to source at local grocery stores. (*Update: chocolate has been challenging to sources this year. My chocolate blend is still Dark chocolate (70%). I source high-quality chocolate, but it has been a struggle to consistently use the same brand of chocolate. This is also why you may notice an increase in my pricing.

Eventually, I want to offer additional flavors. White Chocolate, Milk Chocolate, and other exciting concoctions. They are still in the testing phase. Some of them have been far too sweet and I would rather deliver a consistently delicious product, than offer more options.

Homemade Marshmallows

I take the time to make my own marshmallows. First, of all, I’m not particularly fond of marshmallows, or at least I wasn’t until I decided to make my own. Homemade marshmallows are gooier and the flavor is fuller.

Secondly, I love learning about how things are made. Sometimes I learn and continue to buy from the store, but that was not the case with marshmallows. I love every aspect of making homemade marshmallows and the extra effort is worthwhile in making my confections.

Finally, I can FLAVOR my marshmallows. My current flavor is Vanilla Bean. My next batch will be peppermint. I have a few more that I would like to make before the Hot Cocoa Season is over. (Orange, Coconut, I even had a request for banana).

Are Custom Ocelot Bombs a thing?

Absolutely! I like to decorate my Bombs with some embellishments. (Sprinkles, Colorful Drizzles, Sanding Sugars, Royal Icing Transfers, etc). I also decorate them so I can tell the difference in the flavors.

Valentine’s Day Special

For Valentine’s day, I wanted to turn a classic treat into a delicious cookie. I love the traditional phrases, but I enjoyed taking a LOT of liberties with various other ideas and even asked a few friends for some ideas too!

I knew I needed a classic and modern collection; they were easy choices. I also didn’t want to alienate those that aren’t currently coupled or aren’t into the holiday, and my mind ran wild with the idea of anti-conversation cookies.Ā Maybe you like Valentine’s day, and you don’t want to share the cookies. Or, you want to share some humor with some friends? Perhaps there is someone who doesn’t understand that they have been put in the “friend zone,” and they need a more explicit message?

Building my website has been nerve-wracking. Developing the courage to share it and invite others to view it has filled me with excitement, anxiety, joy, and so many other emotions. To give myself a little extra push, I decided to make a collection of encouragement cookies. A third of them are focused on “GIRL POWER,” but more broadly, they can be used for any audience that needs some inspiration.

I had a lot of “extra” ideas that I couldn’t seem to let go of, but I liked having a clean dozen in each collection. Naturally, this created the “bonus” collection. I thought a cookie that simply said “cats” was a purr-fectly clear message that said, “not interested.” My awesome SIL also thought it was hilarious, but as I mentioned it to a few other people, it didn’t really get any laughs. (Side note, my SIL and I laughed hysterically at this. Maybe it is because we are cat ladies).

When ordering you can mix and match as you please. Or you can order a dozen of one (or each) collection. If you order 6 or a dozen cookies, the cookies will be 6 different colors (or pairs of 6 different colors). If you order 2 cookies, I will randomly choose 2 colors.

All of the cookie orders will come in their own boxes sized based on the number of cookies.

Updates

Now Taking Orders!

I am bubbling over with joy to announce I am officially taking local orders! If you are interested, I have created a “Custom Orders” page on the menu bar! It is complicated to include every option available, so if you are in doubt, include any thoughts or ideas in the notes section of the form.

A couple of weeks ago, I got super official and set up my business as an LLC and created all the appropriate filings to pay taxes.Ā (I still need to get with my county. I am hoping to accomplish that in the next week or so. I want to be a good citizen and check all the blocks. I couldn’t submit that form online, and their office is 20 miles from my day job).Ā I know that may not seem exhilarating, and paying taxes isn’t exactly on my top-10 list of exciting things, but it makes everything more “real!”

Cookie-Cutters | Updates

Custom Cookies

I am so excited because I can finally make custom Cookie-Cutters! (Cue, Handelā€™s ā€œMessiahā€) I recently was gifted with a 3-D Printer. I am beside myself with excitement! I have had a Silhouette (craft cutting machine) for seven years and love it. When I discovered they started making 3-D printers, I knew the Silhouette Alta was on the top of my wish list.Ā (This is not a sponsored post. Just a fangirl geeking out).Ā I use my Silhouette for more than craft cutting; I also use it for graphic design. Iā€™m not sure this is the intended use case, but I already have the software, and I know how to use it. (Itā€™s how I turned my sketch of the ocelot logo into an actual logo).

I have an understanding of the software, and I trust the maker of silhouette products, plus the retail cost of the Silhouette wasnā€™t astronomically high, and I felt like it was a good entry point for a hobby 3-D printer. My initial goal was to earn enough bakery profits to buy the 3-D printer, but secret Santa surprised me!!!

What does this mean for Custom Cookies?

Now that I have this 3-D printer, I can design and print custom cookie cutters and cookie stamps for any occasion. I wonā€™t have to wait to order from Etsy or Amazon. I wonā€™t waste hours scouring page after page searching for the perfect toy soldier and end up with a fantastic toy soldier that has short legs. My creative mind can go wild, and the sky is the limit!

What are the actual limitations?

Realistically there are, of course, limitations. The print bed of the Silhouette Alta is about 5-inches in diameter. Cookie-cutters have a handle, which takes up some space, so about the largest, I can make is about a 4.5-inch square (20.25sq inches), which is an XL cookie on my menu.

I have to be cautious about the amount of detail I use in the cookie stamps. In my first design, I created a simplified Ocelot stamp and cutter. Some of the features were fine and broke off. Since I am working with edibles, this isnā€™t ideal. I had to go back to the drawing board and create a design that didnā€™t have whiskers that would be fragile.

Other than size and fine detail, I have a vast amount of flexibility, which is thrilling! Canā€™t find an ocelot cookie-cutter? Iā€™m your girl. Are you looking for A narwhal wearing a birthday hat? Iā€™m your girl! Love Stegosauruses, but canā€™t find a cookie-cutter in a sea of T-rex and Triceratops? You guessed it; I’m your girl!!
